Quick and Healthy Weeknight Dinners: Family Favorites from Farm On Central

Whether you’re darting to school events or winding down from a homeschool day, we all need easy nutritious dinners to fall on. As our days fill up with activities, having quick, wholesome dinner options ready is a lifesaver. Here are some of our family favorites that you can quickly whip up and enjoy, too!

Easy Healthy Back-to-School Dinner

The Hack of All Hacks!: Stir Fry

Stir fry is a fantastic go-to meal because it’s incredibly versatile and can be made with whatever you have on hand. It’s like the “soup of Asian cuisine”—catch-all and comforting. Here’s how we do it at Farm On Central:

  • Base Ingredients: Start with any vegetables that are yelling at you from the fridge. Today, I’ve got some slightly sad zucchini and vibrant green beans.
  • Protein & Rice: Add a protein like ground turkey and some organic Lundberg basmati rice, which we always have in stock.
  • Flavor Enhancers: Spice it up with coconut aminos, ginger, and if you’re like me and Michael, a drizzle of sriracha mixed with a bit of mayo.

It’s a meal that everyone can customize at the table, making it perfect for picky eaters like my son, who can’t stand cooked green beans but will munch them raw straight from the field. Go figure!

An Elevated Classic: Spaghetti

I know, I know, Spaghetti night can be a cop-out, but who cares when you’re doing it with great ingredients?

  • Pasta Choices: We use gluten-free Jovial pasta and Bionature for a clean, traditional noodle.
  • Homemade Marinara: Our Farm On Central marinara sauce, made from our own basil, tomatoes, garlic, and a touch of salt, is a simple tasty sauce you can use for lots of things, but especially for spaghetti.
  • Sides: Don’t forget our homemade Farm On Central croutons mixed with our Farm On Central Ranch and salad mix for a hearty, complete meal.

Preparing this dish is a breeze—just thaw the meat (if you use it) and sauce quickly in some warm water, and you’re ready to go!

Kilpatrick Family Comfort Food: Tomato Soup and Grilled Cheese

On a rainy day, nothing beats the classic comfort of tomato soup paired with a grilled cheese sandwich.

  • Tomato Soup: Use fresh tomatoes cooked down with onions and a liberal amount of garlic. Blend it smooth with a bit of cream and finish with fresh basil for that perfect creamy texture.
  • Grilled Cheese: Our artisan sourdough bread with white cheddar or Pepper Jack for those who like it spicy is ideal. Try adding everything bagel seasoning for an extra flavor kick.

This simple yet delightful meal is easy to make with just a few ingredients and can be customized to suit any taste.
